This may seem like a strange recipe - but trust me, scrambled oats are the one! I used raspberries but get creative with the fruit you use.
Ingredients
- x1 banana
- 1/2 tsp cinnamon
- pinch of sugar
- pinch of salt
- x1 egg
- x2 tbsp oats
- 50g of Frozen/fresh berries of your choice
- 1-2 tbsp plain greek yogurt
- Handful choc chips
- 1 tsp peanut butter
- 2 tsp chia seeds
Directions
Mix a banana, oats (enough to get it thick), egg, 1/2 tsp cinnamon, handful of brown sugar pinch of salt.
Smash that into a pan on medium heat, flatten out like a pancake and leave that to brown off on the bottom.
Now stick some frozen or fresh berries in another pan, slowly heat these until they’re broken down and runny.
Now start breaking up your oats just like scrambled eggs and keep the clumps, let it get crispy for a few more minutes.
Get loads of yogurt in a bowl, top with your scrambled oats, berry compote, choc chunks, fresh berries, peanut butter & chia seeds.
