A perfect breakfast for the weekend!
Ingredients
- Mini tortilla wraps (3 each)
- x1 can of black beans
- Pinch of sugar
- Spring onions
- 1/2 diced onion
- x1 can of tomatoes
- 3 minced garlic cloves
- Salt & pepper
- 1/2 tsp chilli powder
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- 2 eggs per person
- Diced coriander (optional)
Directions
Fry off sliced spring onions with some salt, pepper, chilli, cinnamon, cumin, 2 garlic cloves for a minute or so & then add tinned tomatoes & a pinch of sugar - simmer until you serve.
Add half a diced onion into the pan with some oil, salt, pepper for a few mins then add some beans & garlic. Add a splash of water and reduce, Finish with coriander.
Fry off some eggs and toast some mini wraps then plate up and top with more coriander and other things you have that make it look pretty!
