English muffin topped with smoked salmon, poached egg & hollandaise sauce. Check out my homemade English muffin recipe in the skills section if you fancy making your own!
Ingredients
- x1 egg yolk
- 1tsp of vinegar
- Juice from 1/2 lemon
- Pinch of salt & pepper
- x4 cubes of cold butter
- x2 eggs
- English muffin
- Smoked salmon
- Chives (optional)
Directions
Make the hollandaise by adding the egg yolk to a bowl with vinegar, lemon juice, salt & pepper - then add to a boiling pot of water - slowly mix in cubes of cold butter until you have your desired consistency!
Now poach your egg, I like to add to a sieve, drain off the watery white and add to a pan of boiling water for 3-4 mins
Now toast your English muffin.
Butter up your muffin, salmon down, egg on top, cover with your hollandaise & top with pepper & chives - ENJOY.
