This dish makes your eggs a little more fancy - get creative with the veg you use and remember to think about a variety of colours!
Ingredients
- Chopped aubergine & peppers (you can choose other veg)
- Olive oil
- 1 tbsp Garlic powder
- Salt & pepper
- Can of chopped tomatoes
- 4 eggs
- Bread
Directions
Grab a baking dish and fill with your chopped veg. Cover with olive oil, garlic powder, salt & pepper. Roast in the oven at 180 degrees for 10 mins.
Remove the dish from the oven and add a can of chopped tomatoes - mix.
Crack the eggs into the baking dish - make sure you space them out. Then place the dish back into the oven for 5 - 10 mins.
Serve with some toast.
